Department of Nutritional Science Presents Advanced Convergence Research Achievements N

Multidisciplinary studies on taste receptors, metabolic rhythms, and nutrition behavior demonstrate Ewha’s research excellence.


The Ewha Womans University Department of Nutritional Science participated as a presenting institution at the “2025 Outstanding Researcher Exchange (BrainLink) Technology Forum,” hosted by the Korean Federation of Science and Technology Societies (KOFST) from Tuesday, November 4 to Thursday, November 6, showcasing outstanding research achievements.


Hosted by the Ministry of Science and ICT, the forum was organized to strengthen networks among leading domestic and international researchers and to promote convergence research. The selection of Ewha as a presenting institution highlighted the global recognition of the University’s research capabilities in advanced life sciences and nutritional science. 식품영양학과, ‘2025 우수연구자교류지원 기술교류회’서 첨단 융합연구 성과 발표

Under the theme “Understanding Feeding Behavior: From Taste to Brain,” the forum invited 32 domestic and international senior, mid-career, and early-career scholars in advanced bio-related fields to explore new horizons in interdisciplinary research connecting “taste–brain–behavior.” Distinguished scholars in the field of feeding behavior science, including Im Jooyeun of the Monell Chemical Senses Center in the United States—widely recognized for the discovery of “carbohydrate taste” as a new taste quality—gathered for presentations and discussions.

Professor Kim Yuri of the Department of Nutritional Science delivered a presentation titled “Physiological Function of Taste Receptors in Extraoral Organs,” revealing that taste receptors are not limited to the tongue but also play functional roles across multiple tissues, including cancer cell development such as neuroblastoma, skin wound healing, and muscle tissue regeneration.


Following this, Professor Park Yoonjeong presented “Linkage of Macronutrient Distribution and Circadian Clock,” Professor Jung Seojin presented “The Palate’s Evolution: Acquired Liking for Vegan Products,” Research Professor Son Jinyoung presented “Butyrate beyond the Gut as a Host Metabolic Modulator,” and Postdoctoral Researcher Jung Suhan presented “Phb1-Dependent Regulation of Lipid Homeostasis in MASLD Pathogenesis.” Professor Kim Bongsu and Special Appointment Professor Park Taehyun served as chairs for the panel discussions.


Celebrating its 60th anniversary this year, the Department of Nutritional Science has led the training of core master’s and doctoral-level experts through foundational nutrition research based on advanced molecular biology and genomics, nutrition studies utilizing public health big data, and multidisciplinary research networks spanning the food industry, foodservice industry, and food culture. In addition, centered on the Ewha Global Institute of Food and Nutrition, the Department has spearheaded cutting-edge research aligned with the paradigm shift toward personalized precision food industries, achieving significant milestones such as continued selection for the BK21 program and top-tier evaluations in the JoongAng Ilbo university rankings, thereby contributing to national public health nutrition policy and the advancement of the food industry.
