김유리 교수는 식품영양학전공/건강과학대학 소속 교수로 미국 Tufts 대학에서 영양생화학과대사전공으로 박사학위를 받았다. 이후 비타민 A에 관한 연구를 중심으로 영양소 및 기능성 물질들이 암줄기세포에 미치는 영향에 연구를 중점적으로 수행하고 있다. 현재는 여러 기능성 물질의 만성질병, 장내세균분포 등에 미치는 영향 등에 관한 분야로 연구 범위를 확장해 나가고 있다.
임상영양학 및 영양판정 과목의 학부전공수업과 대학원 강의로 '영양과 암', '영양과 면역' 등의 과목을 강의하고 있다. 2012년도 2학기에 우수교원으로 선정되었고, 2014년 한국과학기술단체 총연합회에서 제 24회 과학기술 우수논문상을 수상했으며, 2013년부터 한국영양학회 학술이사로 활동하고 있다. 현재까지 총 90여편의 논문을 <Cancer Letters>, <Cancer Research>, <Journal of Nutritional Biochemistry>, <Journal of Functional Foods> 등 SCI급 국제학술지에 발표했다. 저서로는 『임상영양학』과 『영양판정』이 있다.
