Introduction

The Global Food and Nutrition Research Institute, which was established in 1971, is the principal research institute of Ewha Womans University in food and nutrition. It is committed to investigate and pursue solutions for food and nutritional problems and to provide relevant technologies and scientific information on food and nutrition. The institute also aims to transfer technologies to food and nutrition industries, health and nutrition program implementors as well as communities with the aim of promoting health and well-being of the people in the world. The objectives of this institute are

  • to identify and develop strategies to solve food and nutritional problems worldwide using
    environment-friendly and globally competitive tools and technologies.
  • to do research and develop an analytical food quality and safety assurance system
  • to provide relevant technologies and scientific information on food and nutrition.
  • to transfer technologies to food and nutrition industries, health and nutrition program implementors as well as communities
Activities
  1. 1. The Nutrition and Weight Management Center
    • - Collaborative research activities on nutrition and weight management with government, research institutions, and relevant industries
    • - Offers highly individualized services for nutritional disorders and weight problems for individuals of all ages.
    • - Community-based cooking and nutrition education programs for middle-aged and senior men
  2. 2. The Nutritional Physiology Center
    • - Study on the research nutritional physiology and carry out a scientific investigation
    • - Mechanism studies of functional foods and train functional foods technical professional
    • - Support project for functional foods industries the FDA(korean food & drug administration) certification
  3. 3. The Sensory Evaluation Center
    • - Carry out scientific investigation and research related to sensory evaluation.
    • - Focus on the evaluation of quality attributes of various products in connection to consumer drivers of liking using statistical analysis.
    • - Understanding of physiological, psychological, cognitive factors and mechanisms involved in sensory evaluation is included in research interest.
  4. 4. The Food Analysis Center
    • - Evaluate food characteristics and qualities using instrumental analyses
    • - Determine novel compounds in foods on the base of chromatography and spectrometry
    • - Perform qualitative and quantitative analyses of diverse foods
  5. 5. The Food Safety Center
    • - Detection of foodborne microorganisms using antibody and DNA probe
    • - Analysis of chemical hazard in food / Reduction of food hazards in food Low acid canned food
  6. 6. Food & Culture Research Center
    • - Education and academic research in traditional Korean food and culture
    • - Research in comparison of diverse food and culture from all corner of the world
    • - Integration of research on diverse food and culture through cultural perspective
  7. 7. The EWHA - DAESANG Nutrition Research Center
    • - Evaluate the efficacy of health/functional foods
    • - Carry out the functional foods development
  8. 8. The Molecular Nutrition Center
    • - Nutrigenomics: interaction between nutrient and gene
    • - Development of transgenic animal model and bio-marker for the efficacy assessment of bioactive foods
    • - Control of gene expression related to obesity and cholesterol metabolism by nutrient and bioactive foods
    • - Bioactivity and safety assessment of nanofoods
